Ok, it’s official. I think I’m in love. With sausage and cherry peppers, that is. Whoever arranged this marriage was genius.
I discovered this meal at a fancy Italian bistro and truth be told, I was a little timid. I mean, who can pronounce all those fancy words like scarpariello? And what the heck were cherry peppers anyway?
To my surprise, recreating the dish at home was quite easy and successful! Which left me wondering, what would Scarpariello taste like with tomato sauce and red wine? In one word? Awesome. Delicious. Fan-freakin-tastic. Ok, maybe that’s three words.

In stubborn defiance of the storms descending upon us, we grilled Brats. In hats and gloves. Because we can. I even put tulips on my table and made some pasta salad to top off our little mutiny.
Whether rain or shine (oh look, more snow), it can still be Spring in my heart. Ergo, pasta salad. Who says you have to wait til summer?
This gluten free, low fodmap pasta salad got my seasonal taste buds going! A classic combination of tomato, basil, and mozzarella that is fresh and satisfying. Pretty sure I had two helpings and then went back for more. I threw this together in 15 minutes. You could add onion too if you so desire. Valentine’s Day brings out the sweet tooth in all of us. And nothing says love like those little heart shaped sugar cookies. So cute and tiny and practically guilt free. At least that’s what I tell myself.
I baked an entire batch of these at Christmas (reindeer shapes, of course) and they were gone immediately. I was literally rolling out my last ball of dough, watching sneaky little hands do a drive by on the other side of the island, swiping fresh cookies off the plate. This recipe is low-fodmap and can easily be made gluten free but is still a soup the whole family can enjoy! The only store-bought broth I have found that is low-fodmap (contains no onions or garlic) is Progresso’s Chicken Broth.
