This traditional salad can still be enjoyed on a low-fodmap diet! It makes for a great summer lunch or large evening meal. We love filling our bowls to the brim with fresh veggies and a variety of protein. As I watched my husband drizzle his delicious ranch dressing, I decided it was about time I had some too. Wa-la! Grilled Mediterranean Chicken & Zoodles

chickenI love the Mediterranean. The land, the people, the food. Oh the food. Being part of a big Mediterranean family introduced me to a whole new world of cuisine possibilities. So you’ll find me cooking a lot of Mediterranean meals around here.

Good thing it’s one of the healthiest diets out there, focusing on vegetables, whole grains, legumes, nuts, healthy oils, herbs and spices. Thankfully these meals are easy to customize, especially now that I have officially started fodmapping, as I now like to call it. And I have a feeling there will be many more upcoming posts as I create my low-fodmap meal plan.

This meal is easy and fast with little prep work! My style of a weeknight dinner. For my fellow fodmap friends, just omit the onions and garlic (or substitute 1 tsp of garlic infused oil) and wa-la! Another recipe to add to the collection.

Note about this recipe: zucchini and squash release a lot of water when cooked so vegetables may have excess liquid. Just drain liquid before adding lemon juice and zest. Also beware if vegetables are overcooked they can get a bit “soupy” so just watch ’em close! Continue reading

It’s that time of year again! Strawberry picking from our local farm has become a favorite family activity. Nothing beats choosing your own berries, making memories, and eating fruit that tastes like candy! These make for the best jam, salads, and holiday treats.

Berry Avocado Salad

When looking for a refreshing and light meal, this salad is always a crowd pleaser. It’s healthy, brightly colored, and as my husband says, “tastes like candy”.

This salad is easily adaptable and the add-on possibilities are endless. And it’s easy to make as much or as little as you want by controlling the portion of produce (for fodmap, go light on the avocado and dried cranberries). Baking Powder Substitute: a corn-free recipe

flour-powder-wheat-jarEverything seems to have corn in it these days. Even baking powder. This may be old news, but thankfully there’s an alternative that makes baked goods still possible.

A word of advice: make sure you use cream of tartar and not another alternative for this recipe. I like to make this in large batches because it saves time later. I saved an old glass spice jar and it worked perfectly for storing my corn-free baking powder!

Ingredients

  • 1/4 c arrowroot powder
  • 1/4 c baking soda
  • 1/2 c cream of tartar

Directions

Mix all ingredients together in a bowl. Store in an airtight container in your pantry. 1 tsp substitute is equivalent to 1 tsp baking powder. Use in place of baking powder for recipes like Gluten-free Pancakes.

Saturday mornings make me happy. Visions of big morning breakfasts and the aroma of coffee percolating in the kitchen warms my heart. Hubs and I would grab large mugs filled with coffee and move to the front porch where we would rock the time away discussing the news, life, and relationships.

Hey, a girl can dream.

So maybe our Saturdays aren’t always quite like that, but at least pancakes have their rightful place in the regular Saturday program. And gluten-free makes a happy me.
