When looking for a refreshing and light meal, this salad is always a crowd pleaser. It’s healthy, brightly colored, and as my husband says, “tastes like candy”.
This salad is easily adaptable and the add-on possibilities are endless. And it’s easy to make as much or as little as you want by controlling the portion of produce (for fodmap, go light on the avocado and dried cranberries). But the best part is the simple, 3-ingredient dressing that literally takes no time to make but tastes so good!
Ingredients
- Spinach
- Strawberries, sliced
- Raspberries (optional)
- 1 Avocado, sliced
- 1-2 Tbsp sliced red onion
- Walnuts
- Pecans
- Dried cranberries
- Feta cheese (optional)
Strawberry Balsamic Vinaigrette:
- 1/3 c olive oil or canola oil
- 1/4 c balsamic vinegar
- 2 Tbsp of your favorite strawberry jam (raspberry works too!)
Directions
Add oil, balsamic vinegar, and strawberry jam to a small jar. Place lid on jar and shake until blended. Seriously how easy was that??
Combine spinach, berries, avocado, and onion in a large bowl. Add nuts and dried cranberries. Sprinkle feta on top and serve with dressing.
How ridiculously easy is that!? Perfect for a last minute summer meal, side dish, or a cookout!
