When the temperatures reach an arctic level, I prefer to enjoy winter from inside my home.
This homemade stew is the perfect end to a chilly day. The best part? Throw it all in your crock pot for an effortless meal! A nutritious blend of protein, vegetables, and healthy carbs to keep you full. Healthy and hearty, this delicious soup will warm you from the inside out.
As a bonus, this stew is also dairy-free, gluten-free, and low-fodmap!
Ingredients
- 1 lb stew meat (black angus)
- 3 Tbsp gluten free flour
- 2 Tbsp olive oil
- 4 small/medium baby red potatoes, cubed
- 3 celery stalks, chopped
- 3 carrots, chopped
- 5 green onion stalks (green part only)
- 2 Tbsp fresh parsley
- 6 cups water
- 1 heaping Tbsp balsamic vinegar
- 1 tsp Italian seasoning
- salt & pepper to taste
Directions
Wash produce and chop celery, carrots, green onion, and parsley.
Dice potatoes into 1/4 pieces. Toss meat in a bowl with flour to coat.
Heat olive oil in a skillet on medium heat and brown meat on both sides, adding salt and pepper. The meat should be mostly brown on the outer sides but still raw in the middle.
Transfer meat and all juices from the pan to the bottom of your crock pot. Top with potatoes, onions, carrots, celery and parsley. Add water, seasonings, vinegar, salt and pepper. Optional: throw the celery leaves in for more flavor!
Cook on Low for 5-6 hours until meat is done and stew starts to boil. Serve with a salad and loaf of sourdough bread!
